I absolutely love paw paws. They're a fruit that's native to the Mid-Atlantic. I find them here in Maryland. They have a tropical flavor, reminiscent of bananas, mango and strawberries. The harvest season is only a month at most.
I really wanted to make individual caramels, but that didn't work out. There was no way I could get the sugar hot enough without burning the paw paw pulp. But anyway, I was able to salvage it and make a caramel sauce that I was really happy with.
