π« I love making ganache with beer. For this one, I went the non-alcoholic route using First Ride by @AthleticBrewing, an βextra dark with coffeeβ. If you weigh your ingredients, itβs really easy. Use twice as much chocolate as beer. I find this ratio is best with a semi-sweet chocolate, and makes a pourable ganache. It will be looser if you use milk chocolate. By playing with the ratios, you can even make a rollable truffle. β£

πΊ Simmer your beer, then turn off the heat. Add the chocolate and stir it until melted. If needed, you can tun the heat in to the lowest setting. I also like a pinch of cinnamon and chili flakes in there. β£
