      So I thought today, all right, we talk about protein and we mention how there are certain amino acids that you must get from food that we do not make the essential ones and then there are non-essential ones, and that got me to thinking.

      And don't worry, I'm not going to go into detail here, but I am going to put on my professor hat for just a moment and talk about amino acids.

      So, just like the Legos, amino acids have two characteristic little side chains and this is where they get their name and this is what makes them an amino acid.

      You have an amine group, which is a nitrogen-based side chain, and then you have the carboxyl group, which is a carbon bound to oxygen, and it creates a slight acidic side chain there.
