Sarah's Meal Prep Chipotle Breakfast Burritos

 

Ingredients:

8 whole eggs

Scallions

Salt and Pepper to taste

1 package ground sausage

1/3 packet of taco seasoning

Shredded Mexican Blend Cheese

6 Flour Burrito Tortillas

1 Table Spoon of unsalted butter

Chipotle Mayo (I used an avocado oil based mayo)

Directions:

Mix together 8 eggs into a bowl then add salt and pepper. I used kitchen sheers to finely cut scallions and put them into the bowl with eggs. On medium high heat melt butter in your pan and then add the egg mixture. Stir often to keep the egg scramble in smaller pieces. Once your eggs are cooked set aside. Using the same pan cook your sausage, sprinkle with the taco seasoning while cooking. Once your sausage is cooked it's time to assemble your burritos. Place a scoop of eggs and sausage in the center of the tortilla then top with cheese and chipotle mayo. Wrap your tortilla and then using the same pan as before (I wiped out the sausage grease and added a little more butter) place your burrito in seam side down. Cook until lightly browned and crispy then flip and once that side is lightly browned and crispy remove from the pan. Let the burrito cool and then wrap in aluminum foil and place in the fridge until ready to eat!

To re-heat: 

In Microwave - remove aluminum foil and place on a paper towel or plate and heat for 1:30 min (not the recommended way as the tortilla doesn't crisp back up)

Convection Oven: Open aluminum foil 400 for 10 min

Airfrier: Remove from aluminum foil 395 for 5 min
